  • 2 teaspoons baking powder
  • 1 teaspoon kosher salt
  • ⅓ cup butter (for sauce)
  • 1 cup brown sugar (for sauce)
  • ½ cup 35% cream (for sauce)
  • 1 teaspoon kosher salt (for sauce)
  • Whipped cream (for serving)

Instructions

  1. Preheat your oven to 350°F and lightly butter an 11 x 8-inch baking dish.
  2. In a bowl, combine chopped dates with baking soda. Heat the milk in a saucepan until scalding and pour over the dates; let cool for about 15 minutes.
  3. In another bowl, mix flour, baking powder, and salt. In a food processor, blend eggs, dark brown sugar, butter, and vanilla on low speed. Gradually add dry ingredients followed by the date mixture until smooth.
  4. Pour batter into the dish and bake for approximately 30 minutes or until set.
  5. For the sauce, melt butter in a saucepan, stir in brown sugar and salt until dissolved, then add cream slowly and simmer until thickened.
  6. After baking, poke holes in the pudding and pour one-third of the caramel sauce over it to soak. Let sit for at least 15 minutes before serving warm with whipped cream.
