  • 1 pound lean ground turkey
  • 1 teaspoon smoked paprika

  • ½ cup black beans (drained and rinsed)
  • ½ cup canned corn (drained)
  • ½ cup diced tomatoes
  • ½ cup shredded cheese (cheddar or Mexican blend)
  • Fresh cilantro for garnish

Instructions

  1. Preheat your oven to 400°F (200°C). Wash the sweet potatoes and pierce them several times with a fork. Bake directly on the oven rack for 45–50 minutes until fork-tender.
  2. While baking, heat olive oil in a skillet over medium heat. Add diced onion and cook for about 3–4 minutes until translucent.
  3. Stir in minced garlic and cook for an additional 30 seconds before adding the ground turkey. Cook until browned.
  4. Season the turkey mixture with smoked paprika, chili powder, sea salt, and black pepper. Mix well.
  5. Add black beans, corn, and diced tomatoes to the skillet; simmer for about 5–7 minutes to meld flavors.
  6. Remove the sweet potatoes from the oven and slice them lengthwise down the center. Gently mash the flesh with a fork to create space for filling.
