  • 1/8 tsp fresh nutmeg

Instructions

  1. Heat olive oil in a medium-sized soup pan over medium heat until shimmering.
  2. Add chopped shallots and sauté until translucent, about 3–5 minutes.
  3. Stir in cubed sweet potatoes and apples with a pinch of salt; sauté for another 3 minutes.
  4. Pour in vegetable broth to cover the veggies; bring to a gentle simmer.
  5. Simmer until sweet potatoes and apples are soft, about 15–20 minutes.
  6. Blend the soup until smooth using an immersion blender or regular blender (cool slightly before transferring).
  7. Stir in nutmeg, cinnamon, adjusting seasoning to taste; add maple syrup for extra sweetness if desired.
