  • 1 lb beef ribs (cut into 1-inch chunks)
  • 1 lb daikon radish (chopped into chunks or cubes)
  • 1 inch ginger (thinly sliced)
  • 5 cloves garlic (peeled)
  • Water
  • 2 tsp salt (or to taste)
  • 1 tsp white pepper (or to taste)
  • Fresh cilantro or scallions (for garnish)

Instructions

  1. In a large pot, cover the beef ribs with cold water. Bring to a boil over high heat and blanch for 3-4 minutes to remove impurities. Drain and set aside.
  2. Return the blanched beef ribs to the pot. Add daikon, ginger, and garlic. Fill with about 2 liters of water until all ingredients are submerged, then bring back to a boil.
  3. Reduce heat to low, cover, and simmer gently for 45 minutes to an hour until the beef is tender.
  4. Adjust seasoning with salt and white pepper according to your taste.
  5. Garnish with fresh cilantro or scallions before serving hot.
