  • 10 cups water
  • 1 whole yellow onion (with skin if organic)
  • 2 green onions or 1 Korean leek
  • 2 thick slices of ginger
  • 1/2 medium radish
  • 2 tablespoons garlic (chopped or whole)
  • 1 tablespoon soy sauce (guk ganjang)
  • 1.5 teaspoons sea salt

Instructions

  1. Place beef short ribs in a large pot, add water, and bring to a boil.
  2. Reduce heat and simmer; add onion, green onions (or leek), ginger slices, and optional green onion roots.
  3. Simmer for about an hour, skimming any foam that forms on top.
  4. Add radish slices, garlic, soy sauce, and sea salt; stir well.
  5. Continue to simmer for another 30 minutes until flavors meld and meat is tender.
