  • 6 cups sweet cherries (pitted and halved)
  • ⅔ cup granulated sugar
  • ⅓ cup cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 2 ¼ cups all-purpose flour
  • 1 cup cold unsalted butter (cut into cubes)
  • 7 tablespoons ice-cold water

Instructions

  1. Prepare the cherry filling by mixing pitted cherries, sugar, cornstarch, lemon juice, vanilla extract, and salt in a bowl. Set aside.
  2. In another bowl, combine flour, sugar, and salt. Cut in the butter until crumbly. Gradually add ice-cold water to form dough.
  3. Chill the dough for at least 30 minutes before rolling it out.
  4. Preheat the oven to 425°F (220°C). Fill the pie crust with cherry mixture and dot with butter. Cover with a second crust.
  5. Brush with egg wash, sprinkle sugar on top, then bake for 15 minutes at high heat before reducing to 350°F (175°C) for an additional 50 minutes.
