  • 2 lbs fresh yellow peaches (about 67 peaches)
  • 2 tbsp lemon juice or lime juice
  • 3/4 cup white granulated sugar
  • 1/4 cup + 1 tbsp tapioca starch
  • 1 tsp vanilla extract
  • 1 tsp smoked paprika or cinnamon
  • 1 tbsp unsalted butter (for topping)
  • 1 egg yolk + 1 tbsp milk (for egg wash)

Instructions

  1. Prepare your pie crust using a homemade recipe or store-bought option.
  2. Peel and cube the peaches into 1-inch pieces.
  3. In a large bowl, mix cubed peaches with lemon juice, sugar, tapioca starch, vanilla extract, and smoked paprika until well combined.
  4. Preheat your oven to 400°F (200°C).
  5. Roll out one disc of pie dough and place it in a pie dish, then pour in the peach filling.
  6. Roll out the second disc and cut it into strips to create a lattice top over the filling; crimp edges to seal.
  7. Brush the lattice with an egg wash made from beaten egg yolk and milk; sprinkle with sugar and dot with butter.
