  • 2 bags Frozen peaches (20 ounces each)
  • 1 cup Granulated sugar
  • 1 cup Brown sugar
  • 2 cups All-purpose flour
  • 1 stick Unsalted butter (cold)
  • 1 teaspoon Vanilla extract
  • 1/2 teaspoon Almond extract (optional)
  • 1/2 tablespoon Cinnamon
  • 1/2 teaspoon Nutmeg
  • 2 teaspoons Corn starch
  • 1 teaspoon Cream of tartar
  • 2 tablespoons Water
  • 1 teaspoon Fresh lemon juice
  • 2 teaspoons Baking powder
  • 1/2 teaspoon Salt
  • 1/4 cup Boiling hot water
  • 3 tablespoons Granulated sugar (to dust top of cobbler)

Instructions

  1. Preheat your oven to 375°F.
  2. In a sprayed 9×13 baking dish, combine frozen peaches, both sugars, vanilla extract, almond extract (if using), cinnamon, nutmeg, corn starch, cream of tartar, butter, water, and lemon juice. Mix well.
  3. Cover the dish with foil and bake for 20 minutes.
  4. Meanwhile, mix flour, both sugars, baking powder, salt, and half a tablespoon of cinnamon in a bowl. Cut in cold butter until crumbly.
  5. Stir in boiling water until just combined to form a dough.
  6. Remove the peaches from the oven and dollop the dough on top.
  7. Sprinkle with granulated sugar and remaining cinnamon; bake uncovered for an additional 30–45 minutes until golden brown.
