  • 113 g unsalted butter
  • 200 g dark chocolate
  • 100 g brown sugar
  • 50 g granulated sugar
  • 3 eggs
  • 90 g all-purpose flour (sifted)
  • A pinch of salt
  • 1/2 tsp vanilla extract
  • 240 ml heavy cream
  • 250 g mascarpone cheese (room temperature)
  • 2 tbsp espresso powder
  • Cocoa powder for dusting

Instructions

  1. Preheat the oven to 350°F (175°C). Line an 8 or 9-inch square baking tin with parchment paper.
  2. In a microwave-safe bowl, melt the chopped dark chocolate and butter in intervals until smooth.
  3. Mix in both sugars until combined; then add eggs one at a time, whisking well after each addition.
  4. Sift flour and salt into the mixture; fold gently until just combined.
  5. Pour the batter into the prepared tin and bake for 25-30 minutes until set.
  6. Once cooled, poke holes in the brownies and drizzle espresso over them before serving.
