  • 500g cooking apples (e.g., Bramleys)
  • 500g eating apples (e.g., Galas)
  • 75g golden syrup
  • 75g soft light brown sugar
  • 50g butter
  • 225g plain flour
  • 150g cold diced butter for crumble
  • 75g rolled oats
  • 1/2 teaspoon vanilla extract
  • 150g golden caster sugar or soft light brown sugar
  • 1 tablespoon water or apple juice
  • 1/2 teaspoon ground cinnamon (optional)
  • 5 tablespoons of the cooled toffee sauce
  • a pinch of salt
  • 75g demerara sugar

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. In a saucepan over low heat, combine golden syrup, soft brown sugar, butter, vanilla extract, and apple juice. Stir until melted into a smooth toffee sauce.
  3. In a separate bowl, mix sliced cooking apples with sugar and spices; cook gently for about 5 minutes until softened.
  4. Prepare the crumble by combining flour, salt, oats, and cold diced butter in another bowl until crumbly; stir in demerara sugar.
  5. Assemble by pouring the toffee sauce over cooked apples in a baking dish; top with crumble mixture.
  6. Bake for 30-40 minutes until golden brown and bubbling.
