  • 6 oz grated zucchini (squeezed to 4.25 oz)
  • 1 lb 93% lean ground turkey
  • 1/4 cup seasoned whole wheat or gluten-free breadcrumbs
  • 1 clove garlic (grated)
  • 1 tbsp grated red onion
  • 1 tsp kosher salt and fresh pepper
  • oil spray

Instructions

  1. Squeeze all moisture from the grated zucchini using paper towels.
  2. In a large mixing bowl, combine ground turkey, squeezed zucchini, breadcrumbs, garlic, onion, salt, and pepper until just mixed.
  3. Divide the mixture into five equal portions (about 4 ounces each) and shape into patties.
  4. Heat a nonstick skillet over high heat and lightly spray with oil. Cook patties on one side for about 5 minutes until browned, then flip and cook for an additional few minutes until no longer pink in the center.
