  • 1/4 + 1/8 teaspoon ground pepper
  • 1 teaspoon chili powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • 1/4 cup grated pepper Jack cheese
  • 2 tablespoons minced flat-leaf parsley

Instructions

  1. Microwave sweet potatoes until tender (about 8–10 minutes total). Let cool.
  2. Cut in half lengthwise and scoop out flesh into a bowl; mix with olive oil, cumin, salt, and pepper.
  3. In a skillet, cook ground turkey until browned. Add garlic, spices, and crushed tomatoes; mix well.
  4. Fill potato skins with the turkey mixture and top with cheese.
  5. Broil until cheese melts (about 30 seconds). Garnish with parsley before serving.
