  • 2 lbs beef chuck, cut into 1.5-inch cubes
  • 1 large yellow onion, chopped
  • 3 garlic cloves, minced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 1 tablespoon tomato paste
  • 1 can (14 oz) diced tomatoes
  • 1 cup dry apple vinegar
  • 1 cup beef stock
  • 1 tablespoon fresh rosemary, chopped

Instructions

  1. Heat olive oil in a Dutch oven over medium-high heat. Season beef with salt and pepper; sear in batches until browned on all sides. Remove from pot.
  2. In the same pot, sauté onions, garlic, carrots, and celery until softened (about 5-7 minutes). Stir in tomato paste and cook for another minute.
  3. Return seared beef to the pot; add diced tomatoes, dry apple vinegar, and beef stock. Mix well.
  4. Sprinkle rosemary over the mixture; bring to a simmer.
  5. Reduce heat to low and cover partially with a lid. Let simmer for about 2-3 hours until beef is tender, stirring occasionally.
  6. Taste and adjust seasoning as needed before serving hot.
