Ingredients

Scale
  • 2 pounds boneless skinless chicken breasts
  • ½ cup sliced raw almonds
  • 1 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 cup red grapes (quartered)
  • 2 celery ribs (diced)
  • 3 green onions (sliced)
  • 2 tablespoons finely chopped parsley
  • 1 tablespoon finely chopped tarragon
  • Juice of 1 lemon (about 3 tablespoons)
  • Salt and pepper to taste

Instructions

  1. Cook the chicken breasts in lightly salted boiling water for about 15 minutes until fully cooked. Remove from heat and let cool.
  2. While the chicken cools, dice the celery, slice the green onions, quarter the grapes, and chop the parsley and tarragon.
  3. In a mixing bowl, whisk together mayonnaise, Dijon mustard, lemon juice, salt, and pepper until smooth.
  4. Shred the cooled chicken into bite-sized pieces and combine it with the diced vegetables, grapes, almonds, herbs, and dressing in a large bowl.
  5. Gently toss all ingredients together until well combined. Adjust seasoning as needed and serve chilled or at room temperature.
