  • 1/2 cup cake flour
  • 1 tablespoon cornstarch
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 3/4 cup cold butter, cut into cubes
  • 1 cup light brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 large egg, cold
  • 2 teaspoons pure vanilla extract
  • 4 ounces semi-sweet chocolate, chopped
  • 1 1/8 cups semi-sweet chocolate chips, divided
  • 3/4 cup coarsely chopped walnuts
  • Sea salt, optional

Instructions

  1. Preheat oven to 400°F (200°C) and line two cookie sheets with parchment paper.
  2. In a bowl, whisk together all-purpose flour, cake flour, cornstarch, baking powder, baking soda, and salt.
  3. In a stand mixer, cream cold butter with brown and granulated sugars until smooth. Add egg and vanilla; mix until combined.
  4. Gradually incorporate the dry mixture into the wet ingredients, then fold in chopped chocolate, chocolate chips, and walnuts.
  5. Using a cookie scoop, portion out the dough onto prepared sheets (about 10 portions). Press additional chocolate chips on top if desired.
  6. Bake for 12-13 minutes until edges are golden brown. Cool on sheets for a few minutes before transferring to wire racks.
