  • 5 cloves garlic (minced)
  • 2 medium carrots (peeled & diced)
  • 2 stalks celery (diced)
  • 4 ounces mushrooms (thinly sliced)
  • 15-ounce can cannellini beans (strained & rinsed)
  • 2.5 cups vegetable broth
  • Fresh thyme leaves

Instructions

  1. In a mixing bowl, whisk together flour, baking powder, salt, and pepper. Incorporate cubed vegan butter until crumbly, then gradually stir in soy milk until just combined.
  2. In a large pot, heat olive oil over medium heat. Sauté onion and garlic until fragrant. Add carrots and celery; cook until softened. Stir in mushrooms and cook until tender.
  3. Mix in tomato paste, vegan Worcestershire sauce, spices, cannellini beans, vegetable broth, and fresh thyme; bring to a simmer.
  4. Drop spoonfuls of dumpling batter into the simmering stew. Cover tightly with a lid and steam dumplings for 15-20 minutes without lifting the lid.
  5. Once dumplings are fluffy, remove from heat and serve warm.
