  • 1/2 cup shallots, diced
  • 2 tsp garlic, minced
  • 1/2 cup zucchini, diced
  • 1/2 cup yellow squash, diced
  • 1 cup black beans or kidney beans
  • 2/3 cup mixed color bell peppers, diced
  • 1/2 cup corn
  • 8 lasagna sheets
  • 2 cups marinara sauce
  • 3 cups cheese (mozzarella and gruyère)
  • For the béchamel: butter, flour, milk, spinach

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Sauté shallots and garlic in oil until fragrant. Add other filling ingredients and cook until tender.
  3. For the béchamel, melt butter and whisk in flour; gradually add milk until thickened. Stir in spinach.
  4. In a casserole dish, layer marinara sauce, lasagna sheets, vegetable filling, béchamel sauce, and cheese.
  5. Bake covered for 30 minutes; uncover and bake for an additional 15 minutes until golden.
