  • 4 medium zucchinis
  • 1 lb lean ground turkey
  • 1 cup low-carb marinara sauce
  • 15 oz ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 large eggs
  • 2 cloves garlic (minced)
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Slice zucchinis lengthwise; sprinkle with salt and let sit for 10-15 minutes then pat dry.
  3. In a skillet, heat olive oil and brown the ground turkey. Add garlic, basil, oregano, salt, and pepper; cook until fragrant.
  4. Stir in marinara sauce and simmer for 5 minutes.
  5. In a bowl, combine ricotta, one cup mozzarella, Parmesan cheese, eggs, and remaining herbs.
  6. In a baking dish, layer meat sauce, zucchini slices, cheese mixture; repeat layers twice more finishing with meat sauce on top.
  7. Top with remaining mozzarella and bake covered for 30 minutes; uncover and bake for an additional 15 minutes until bubbly.
