  • 1 1/4 cup pizza sauce
  • 24 turkey pepperoni slices (halved)
  • 1 1/2 cups mozzarella cheese

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Grease a 13×9 inch baking dish with nonstick cooking spray.
  3. Wash and chop zucchinis into bite-sized pieces and place them in a large mixing bowl.
  4. Pour pizza sauce over the zucchini and toss gently to coat.
  5. Transfer the zucchini mixture into the baking dish and layer half of the turkey pepperoni on top.
  6. Bake for about 30 minutes until zucchini is tender.
  7. Remove from oven, sprinkle with mozzarella cheese and remaining turkey pepperoni.
  8. Return to oven and bake for an additional 5-10 minutes until cheese is melted.
  9. Let cool slightly before serving hot.
