  • 2 large yellow squash
  • 3 ears of corn (kernels removed)
  • 8 ounces mozzarella ciliegine
  • 1/2 cup fresh basil leaves
  • 1 shallot
  • 1 garlic clove
  • 1/4 cup extra virgin olive oil
  • 1/4 cup red apple vinegar
  • Juice of 12 limes
  • 1 tablespoon honey (optional)
  • 1/4 teaspoon salt
  • 1/4 teaspoon fresh cracked black pepper
  • 1/2 teaspoon kosher salt

Instructions

  1. Prepare the Dressing: In a mixing bowl, whisk together olive oil, red apple vinegar, salt, and pepper until well combined. Set aside.
  2. Prepare the Vegetables: Thinly slice the shallot and set aside. Slice the zucchini and squash into quarters and remove the kernels from the corn cobs.
  3. Combine Ingredients: In a large mixing bowl, add zucchini, squash, corn kernels, mozzarella, basil leaves, shallot, garlic (minced), lime juice, honey (optional), kosher salt, and the prepared dressing. Toss gently until evenly coated.
  4. Adjust Seasoning: Taste the salad and adjust seasoning with more salt or pepper if needed.
