  • 28 ounces canned diced tomatoes
  • 14 ounces canned cannellini beans (drained and rinsed)
  • 2 medium zucchini (cubed)
  • 1/2 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon red pepper flakes
  • 10 fresh basil leaves (julienned)

Instructions

  1. In a stock pot over medium heat, add olive oil. Once hot, sauté diced onion for 3-4 minutes until lightly browned. Add minced garlic and cook for an additional 30 seconds.
  2. Stir in canned tomatoes, rinsed cannellini beans, cubed zucchini, Italian seasoning, salt, and red pepper flakes. Mix well and bring to a simmer.
  3. Cover the pot and reduce heat to low. Cook for 15-20 minutes until zucchini reaches your desired tenderness, stirring occasionally.
  4. Remove from heat and stir in fresh basil just before serving.
