  • 1/4 cup oat flour
  • 1 lemon (zest and juice)
  • 2 cloves garlic
  • 2 tbsp parsley
  • 1 tsp cumin
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 1 cup Greek yogurt

Instructions

  1. In a mixing bowl, mash the cooked chickpeas until mostly smooth, leaving some chunks for texture.
  2. Add oat flour, lemon zest and juice, minced garlic, chopped parsley, cumin, salt, and pepper to the mashed chickpeas. Mix until well combined.
  3. Shape the mixture into small patties (about 2 inches wide) and place them on a chilling tray. Refrigerate for about 20 minutes to firm up.
  4. Heat olive oil in a skillet over medium heat. Fry each patty for about 3–4 minutes per side until golden brown and crispy.
  5. For the yogurt sauce, whisk together Greek yogurt, lemon juice, olive oil, minced garlic, and optional fresh dill until smooth.
  6. Serve warm patties topped with yogurt sauce and garnish with extra parsley if desired.
