  • 3 1/2 cups powdered sugar (for frosting)
  • 1 cup fresh blackberries (reduced to 1/3 cup puree) (for frosting)
  • 4 ounces cream cheese, room temperature (for frosting)
  • 1 teaspoon pure vanilla extract (for frosting)
  • Pinch of salt (for frosting)
  • Extra fresh blackberries (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a mixing bowl, cream butter and sugar until fluffy. Add eggs one at a time, then mix in buttermilk and vanilla.
  3. In another bowl, whisk flour, baking powder, baking soda, lemon zest, and salt. Gradually combine with wet ingredients and fold in blackberries.
  4. Divide batter between pans and bake for 28–32 minutes until a toothpick comes out clean. Cool before frosting.
  5. For the frosting, beat butter and cream cheese until smooth, then gradually add powdered sugar and blackberry puree.
