  • 1 1/2 pounds salmon, cut into 1 inch strips or chunks
  • 34 tablespoons cajun seasoning
  • olive oil
  • 2 cups torn ciabatta bread
  • 1 clove garlic, grated
  • 4 tablespoons salted butter
  • 6 cups mixed salad greens or shredded romaine
  • 1 cup mixed fresh herbs: basil, dill, thyme
  • 12 avocados, cubed or sliced
  • 1/3 cup extra virgin olive oil
  • 3 tablespoons toasted sesame oil
  • 1/2 cup tahini
  • 1/4 cup lemon juice
  • 1 tablespoon dijon mustard
  • 12 cloves garlic, grated
  • 1/2 cup grated parmesan cheese
  • 1 cup grated parmesan cheese
  • 3 tablespoons toasted sesame seeds

Instructions

  1. Preheat the oven to 450°F. Lightly oil a baking sheet.
  2. Place salmon on the sheet, coat with Cajun seasoning and olive oil. Bake for 10-15 minutes until cooked through.
  3. For breadcrumbs, combine torn ciabatta with grated garlic and salted butter, then toast on another baking sheet for 10-12 minutes.
  4. Whisk together dressing ingredients: olive oil, sesame oil, tahini, lemon juice, Dijon mustard, garlic, and parmesan until smooth.
  5. In a large bowl, mix greens with parmesan and sesame seeds. Toss with dressing, then add breadcrumbs and avocado before topping with blackened salmon.
