  • 8 ounces dry pasta
  • 2 cups grape tomatoes (halved)
  • 4 ounces baby spinach
  • 1/4 cup extra light extra virgin olive oil
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 1/2 tablespoon dried basil
  • 1/2 tablespoon dried oregano
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon fine table salt (or more to taste)
  • fresh cracked pepper
  • 1/3 cup Parmesan cheese (grated)

Instructions

  1. Boil salted water in a large pot and cook pasta until al dente. Drain and cool in ice water before transferring to a mixing bowl.
