  • 8 ounces dry pasta
  • 2 cups grape tomatoes (halved)
  • 4 ounces baby spinach
  • 1/4 cup extra light extra virgin olive oil
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 1/2 tablespoon dried basil
  • 1/2 tablespoon dried oregano
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon fine table salt (or more to taste)
  • fresh cracked pepper
  • 1/3 cup Parmesan cheese (grated)

Instructions

  1. Cook the pasta in salted boiling water until al dente. Drain and cool in ice water.
  2. Season chicken breast with salt and pepper; grill or sauté until cooked through (about 5 minutes per side). Let it cool and slice.
  3. In a large mixing bowl, combine pasta, sliced chicken, halved tomatoes, and spinach.
  4. Whisk together olive oil, apple cider vinegar, Dijon mustard, dried herbs, salt, and pepper; pour over the salad and toss gently.
  5. Top with grated Parmesan before serving.
