- 8 ounces dry pasta
- 2 cups grape tomatoes (halved)
- 4 ounces baby spinach
- 1/4 cup extra light extra virgin olive oil
- 2 tablespoons apple cider vinegar
- 1 teaspoon Dijon mustard
- 1/2 tablespoon dried basil
- 1/2 tablespoon dried oregano
- 1/4 teaspoon garlic powder
- 1/2 teaspoon fine table salt (or more to taste)

- Cook the pasta in salted boiling water until al dente. Drain and cool in ice water.
