  • ¼ teaspoon cayenne pepper

  • 4 boneless, skinless chicken breast halves (cut into 1-inch cubes)
  • 34 firm large mangoes (peeled and cut into 1½-inch cubes)

Instructions

  1. Soak wooden or bamboo skewers in water for 20-30 minutes to prevent burning.
  2. In a mixing bowl, whisk together olive oil, lime juice, lime zest, chili powder, cayenne pepper, salt, and sugar.
  3. Add chicken cubes and mango chunks to the marinade, stirring gently to coat. Cover and refrigerate for 2-4 hours.
