  • 5 medium tomatoes (chopped)
  • 1 heaping cup of peaches (peeled and diced)
  • 1/2 sweet onion (diced)
  • 1 lime (juiced)
  • 1/4 cup chopped cilantro
  • 1 jalapeño (seeded and minced)
  • 1 small roasted poblano pepper (minced)
  • 2 chipotle chiles in adobo (minced)
  • 1 garlic clove (minced)
  • Salt and sugar to taste
  • Apple cider vinegar

Instructions

  1. Prepare all ingredients by chopping the tomatoes, peeling and dicing the peaches, dicing the onion, mincing the jalapeño, poblano pepper, and garlic.
  2. In a medium mixing bowl, combine chopped tomatoes, peaches, sweet onion, lime juice, cilantro, minced jalapeño, and poblano.
  3. Stir in minced chipotle chiles along with garlic, sugar, salt, and apple cider vinegar.
  4. Mix well until all ingredients are combined evenly. Adjust seasoning if needed.
  5. Let the salsa chill for at least 10 minutes before serving to allow flavors to meld.
