  • 2 teaspoons vanilla extract
  • 2 large eggs, at room temperature
  • 1 cup plain Greek yogurt or sour cream
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/4 teaspoon cardamom
  • 1/4 teaspoon kosher salt
  • 1/2 cup brewed coffee
  • 1/2 cup packed brown sugar (for streusel)
  • 2 teaspoons cinnamon (for streusel)
  • 3/4 cup all-purpose flour (for streusel)
  • 6 tablespoons cold butter, grated (for streusel)
  • 6 ounces cream cheese, at room temperature
  • 1 1/4 cups powdered sugar
  • 23 tablespoons whole milk
  • 1/2 teaspoon vanilla extract (for cream cheese layer)
  • 13 teaspoons instant coffee, to your taste

Instructions

  1. Preheat the oven to 350°F and grease a bundt pan.
  2. In a mixing bowl, beat the butter and brown sugar together. Add Greek yogurt and vanilla; mix until smooth. Incorporate eggs one at a time.
  3. Gradually add flour, baking powder, baking soda, cinnamon, cardamom, and salt. Mix gently then stir in brewed coffee.
  4. Prepare the streusel by combining brown sugar, cinnamon, and flour with grated cold butter until crumbly.
  5. Spoon half of the batter into the bundt pan, sprinkle with streusel mixture, dollop cream cheese on top, add remaining batter, and finish with streusel.
  6. Bake for 50-55 minutes or until a toothpick comes out clean. Cool before glazing.
