  • 1 can (13.5 oz) full-fat coconut milk
  • ¾ cup hot water
  • 3 tablespoons Thai red curry paste
  • Juice of ½ lime
  • 2 garlic cloves, minced
  • 1 teaspoon freshly grated ginger
  • 2 cups jasmine rice

Instructions

  1. Cook jasmine rice according to package directions; set aside.
  2. In a large pot, heat coconut oil over medium heat. Add minced garlic and grated ginger; cook until fragrant.
  3. Stir in Thai red curry paste and cook briefly. Pour in hot water, coconut milk, lime juice, and mix until smooth.
  4. Add chicken thighs, cover, and simmer on medium-low for 18–20 minutes until fully cooked.
  5. Remove chicken, slice into strips, return to sauce, and simmer for another 2 minutes.
  6. Serve rice in bowls topped with sliced chicken and generous sauce ladles.
