  • 1 cup melted coconut oil
  • 2 large eggs
  • 3/4 cup honey or granulated sugar
  • 1 cup high-quality strawberry jam
  • 2 1/2 cups all-purpose flour
  • 6 ounces cream cheese (room temperature)
  • 2 sticks salted butter (room temperature)
  • 1/3 cup plain yogurt or sour cream
  • 2 teaspoons vanilla extract
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1 teaspoon kosher salt
  • 1/4 cup milk
  • 2 1/23 cups powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and line cupcake molds with paper liners.
  2. Blend freeze-dried strawberries into a fine powder.
  3. In a large bowl, mix melted coconut oil, yogurt, eggs, honey, strawberry jam, and vanilla until combined.
  4. Gradually add flour, baking powder, baking soda, salt, and about two-thirds of the strawberry powder; mix until just combined.
  5. Divide batter into cupcake molds and bake for 25-30 minutes until set. Cool completely.
  6. For frosting, whip cream cheese until fluffy, add butter and powdered sugar gradually while mixing in remaining strawberry powder. Add warm milk to reach desired consistency.
  7. Frost cooled cupcakes generously and top with crushed freeze-dried strawberries.
