  • 1 cup chow mein noodles
  • 1 1/2 cups milk chocolate chips

  • 1/2 cup milk or dark chocolate chips
  • 1 tsp coconut oil or butter (optional)
  • Pastel candy eggs (for topping)
  • Optional: Colorful sprinkles or nonpareils

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a small bowl, whisk together flour, cocoa powder, and salt. In a larger bowl, beat softened butter, granulated sugar, and brown sugar until light and fluffy. Add vanilla extract and egg; mix until smooth. Gradually incorporate dry ingredients until a soft dough forms.
  3. Scoop about 1 tablespoon of dough into disks on the baking sheet. Bake for 8–10 minutes or until edges are set. Allow cooling completely.
  4. To create nests, melt milk chocolate chips in a microwave-safe bowl until smooth. Pour over chow mein noodles in a separate bowl and toss to coat.
  5. Scoop chocolate-coated noodles onto each cooled cookie base to shape into nests.
  6. Melt additional chocolate for filling and spoon it into each nest's hollow center; let cool completely before pressing pastel candy eggs on top.
