  • 12 ounces Radiatore pasta
  • 1 lb ground beef
  • 3 tablespoons taco seasoning
  • ¾ cup water
  • 1 cup sharp cheddar cut into small cubes
  • 1 cup halved grape tomatoes
  • ⅓ cup chopped scallions
  • 1 can (15 ounces) black beans drained and rinsed
  • 1 small head romaine lettuce chopped (about 6 cups)
  • 1⅓ cup ranch dressing
  • 2 tablespoons adobo sauce
  • ¼ cup sour cream
  • ¼ cup salsa or salsa style tomatoes

Instructions

  1. Cook 12 ounces of Radiatore pasta in salted boiling water until al dente, then drain and cool.
  2. In a skillet over medium heat, brown 1 lb of ground beef. Drain excess fat and add 3 tablespoons of taco seasoning with ¾ cup water. Simmer until thickened.
  3. In a bowl, whisk together 1⅓ cups ranch dressing, 2 tablespoons adobo sauce, ¼ cup sour cream, and ¼ cup salsa.
  4. In a large mixing bowl, combine cooled pasta with the dressing, followed by cheddar cheese (1 cup), grape tomatoes (1 cup), scallions (⅓ cup), black beans (15 oz.), romaine lettuce (1 small head), and seasoned beef. Mix gently until well combined.
