  • 4 bone-in skin-on chicken thighs
  • 1 cup orzo pasta
  • 3 cloves garlic, minced
  • 1 medium onion, chopped
  • 1 cup cherry tomatoes, halved
  • 1/3 cup sun-dried tomatoes, sliced
  • 1/3 cup Kalamata olives, pitted and halved
  • 2 cups fresh spinach
  • 2 1/2 cups chicken broth
  • 1 lemon, zested and juiced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Season chicken thighs with salt, pepper, and oregano. Heat olive oil in a skillet over medium-high heat and sear chicken for 5–6 minutes per side until golden brown. Remove from the skillet.
  2. In the same skillet, sauté chopped onion until translucent, then add minced garlic and cook until fragrant.
  3. Stir in halved cherry tomatoes and sliced sun-dried tomatoes until softened.
  4. Toast orzo in the skillet for about 2 minutes. Add chicken broth, lemon zest, juice, oregano, thyme, and a pinch of salt.
  5. Return seared chicken to the skillet. Cover and simmer for 15–18 minutes until orzo is tender.
  6. Stir in fresh spinach and Kalamata olives until spinach wilts. Adjust seasoning to taste.
