  • 1 cup cucumber (diced)
  • 1 cup grape tomatoes (halved)
  • 1/4 cup red onion (finely chopped)
  • 1/3 cup feta cheese
  • 1/4 cup Kalamata olives (pitted and halved)
  • 1 cup yogurt
  • 3 garlic cloves (minced)
  • 2 tbsp lemon juice
  • Fresh dill, salt, and pepper to taste

Instructions

  1. Rinse quinoa under cold water in a fine-mesh strainer to remove bitterness.
  2. Cook quinoa in a pot with water according to package instructions until fluffy.
  3. While quinoa cooks, prepare vegetables: dice cucumber, halve tomatoes, chop red onion, and mince garlic.
  4. For dressing, mix grated cucumber, yogurt, minced garlic, lemon juice, dill, salt, and pepper in a bowl.
