  • 1 1/2 teaspoons adobo sauce from canned chipotle chiles in adobo
  • Salt and pepper to taste
  • 4 boneless skinless chicken breasts

Instructions

  1. Prepare the Peach BBQ Sauce: In a saucepan, combine peaches, ketchup, lemon juice, garlic, and adobo sauce. Season with salt and pepper. Bring to a boil, then reduce heat and simmer for about 10 minutes until peaches are soft.
  2. Blend the Sauce: Let the mixture cool slightly before blending until smooth. Adjust seasoning if necessary.
  3. Marinate the Chicken: In a medium bowl, coat chicken with half of the sauce. Marinate at room temperature for 20 minutes or refrigerate for up to 8 hours.
  4. Grill the Chicken: Preheat grill to medium-high heat. Cook chicken for 4-5 minutes per side until nearly cooked through. Brush with reserved sauce during the last few minutes of grilling.
  5. Serve: Slice chicken against the grain and serve with remaining sauce.
