  • 1/2 cup soy sauce
  • 2 ripe mangos
  • 3 garlic cloves
  • 1/2 tsp fresh ginger (grated)
  • 2 tbsp water
  • Cilantro for garnish

Instructions

  1. In a large plastic bag or baking dish, add the chicken thighs.
  2. In a blender, combine soy sauce, mangos, garlic, ginger, and water; blend until smooth.
  3. Reserve 1/4 cup of the marinade and pour the rest over the chicken; seal the bag and refrigerate for 2 to 8 hours.
  4. Preheat your grill to 400°F.
  5. Remove chicken from marinade using tongs; grill each piece for about 6-7 minutes per side until fully cooked (internal temperature should reach 165°F).
  6. Transfer to a serving platter, brush with reserved marinade, garnish with cilantro, and serve warm.
