  • Double crust pie dough (chilled overnight)
  • 4 cups blueberries (fresh or frozen)
  • 2 cups wild blueberries (fresh or frozen)
  • 3/4 cup granulated sugar
  • 5 tablespoons cornstarch
  • 1 teaspoon lemon zest
  • 1 tablespoon lemon juice
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 1/4 teaspoon fine sea salt
  • 1 tablespoon unsalted butter (diced)
  • Turbinado sugar (for sprinkling)

Instructions

  1. Prepare the double crust pie dough according to recipe instructions and chill overnight.
  2. In a large mixing bowl, combine blueberries, wild blueberries, granulated sugar, cornstarch, lemon zest, lemon juice, cinnamon, nutmeg, and salt. Mix until well coated.
  3. Preheat the oven to 425°F (220°C). Roll out half of the chilled dough to fit your pie dish and place it inside.
  4. Pour the blueberry filling into the crust and dot with diced butter.
  5. Roll out the second dough half and place it over the filling. Trim excess dough and crimp edges as desired.
  6. Brush the top with an egg wash made from whisking together egg yolk and heavy cream or whole milk.
  7. Sprinkle with coarse sugar before baking for approximately 80 minutes until bubbly and golden brown.
