  • 1 cup dried pinto beans
  • 8 cups water
  • 1 tablespoon vegetable oil
  • 2 tablespoons unsalted butter (divided)
  • 1 small onion, minced
  • 2 cloves garlic, minced
  • 2 teaspoons salt
  • 1 teaspoon brown sugar
  • 1 teaspoon ground cumin
  • 1 teaspoon chipotle chili powder
  • 2 cups shredded cheese (optional)
  • 1 tablespoon lime juice

Instructions

  1. Rinse and sort the pinto beans. Add them to the Instant Pot along with water and vegetable oil.
  2. Secure the lid and cook on high pressure for 40 minutes. Allow for natural pressure release for 20 minutes.
  3. Reserve 1½ cups of cooking liquid before draining the beans.
  4. In a skillet, melt butter over medium-high heat. Sauté onions for 2–3 minutes, then add garlic, salt, brown sugar, cumin, and chipotle powder; cook until fragrant.
  5. Mix in cooked beans and reserved liquid; simmer briefly to combine flavors.
  6. Mash the mixture to your desired consistency and stir in lime juice and remaining butter until blended.
  7. If using cheese, sprinkle it on top and broil until melted.
