  • 1 lb Shrimp (peeled and deveined)
  • 1 cup Fontina Cheese (or Gruyère)
  • 1 cup Ricotta Cheese (or cottage cheese)
  • 1 cup Mozzarella Cheese (fresh preferred)
  • 1/2 cup Parmesan Cheese (or Pecorino)
  • 9 sheets Lasagna Noodles
  • 1 tbsp Lemon Zest
  • 2 tbsp Lemon Juice

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a saucepan over medium heat, cook shrimp until pink, about 4-5 minutes. Remove from heat.
  3. In a mixing bowl, combine shrimp with lemon zest, lemon juice, and half of each cheese.
  4. In a baking dish, spread a thin layer of the cheese mixture on the bottom. Layer three lasagna sheets on top.
  5. Add half of the remaining cheese mixture over the noodles and repeat layers until all ingredients are used, finishing with noodles on top.
  6. Sprinkle remaining cheeses on top.
  7. Cover with foil and bake for 25 minutes; remove foil and bake an additional 5 minutes until golden.
  8. Allow to cool slightly before serving.
