  • 4 tablespoons butter, cubed & chilled
  • 1 teaspoon vanilla extract
  • 2/3 cup powdered sugar-free sweetener
  • 3/4 cup no sugar creamy peanut butter
  • 6 oz cream cheese, softened
  • 3/4 cup heavy whipping cream
  • 2 tablespoons powdered sugar-free sweetener
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F. Prepare a 9-inch pie pan by spraying it with cooking spray.
  2. In a food processor, combine almond flour, coconut flour, cocoa powder, baking powder, xanthan gum, and salt; pulse until mixed.
  3. Add cubed butter and vanilla extract, then pulse until coarse crumbs form.
  4. Press the mixture into the bottom and up the sides of the prepared pie pan.
  5. Bake crust for 9–10 minutes; let cool completely.
  6. In a bowl, mix sweetener, peanut butter, and softened cream cheese using an electric mixer until fluffy.
  7. In another bowl, whip heavy cream until stiff peaks form; fold half into the peanut butter mixture and then gently fold in the remaining whipped cream.
  8. Spread filling over cooled crust; refrigerate for at least 2 hours to set before serving.
