  • 1 large green bell pepper, seeded and finely diced
  • 1 pint grape tomatoes, halved
  • 1 cup shredded parmesan cheese
  • 2/3 cup olive oil
  • 1/3 cup apple cider vinegar
  • 1/2 teaspoon sugar
  • 1/2 teaspoon salt
  • 1 tablespoon dried basil
  • 1 clove garlic, minced

Instructions

  1. Cook the bow-tie pasta according to package instructions until al dente. Drain and transfer to ice water to cool.
  2. In a skillet over medium heat, brown the diced chicken sausage until cooked through; drain excess fat.
  3. Whisk together olive oil, apple cider vinegar, sugar, salt, dried basil, and minced garlic in a bowl.
  4. In a large mixing bowl, combine cooked pasta, browned chicken sausage, artichokes, olives, bell pepper, grape tomatoes, and parmesan cheese. Pour in the dressing and toss to coat evenly.
