  • 1/4 cup plain Greek yogurt
  • 4 boneless skinless chicken breasts (about 46 oz. each)
  • 1 pound red potatoes (sliced)
  • 1 pound fresh green beans
  • 1 Tablespoon olive oil
  • 1/4 cup parmesan cheese
  • Fresh thyme leaves
  • 1 clove garlic
  • 2 teaspoons kosher salt (divided)
  • Freshly ground black pepper
  • 4 Tablespoons water

Instructions

  1. Zest the lemon, then juice it into a bowl. In a plastic bag, mix Greek yogurt, lemon juice, thyme, minced garlic, 1 teaspoon of salt, and pepper.
  2. Add chicken to the marinade bag, seal it tightly, and refrigerate for at least 30 minutes.
  3. Combine sliced potatoes and green beans in a bowl with olive oil, parmesan cheese, remaining salt, pepper, and reserved lemon zest.
  4. Preheat your grill to medium-high or oven to 350°F. Cut four squares of heavy-duty aluminum foil and spray with olive oil.
  5. Divide the vegetable mixture among packets and place one marinated chicken breast on top of each portion.
  6. Seal the packets tightly after adding 1 tablespoon of water to each. Grill for about 20 minutes or bake for 25-30 minutes until the chicken is cooked through.
