  • 1/4 teaspoon salt
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 3/4 cups all-purpose flour (or gluten-free flour)
  • 1 cup frozen raspberries (chopped)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a baking sheet lined with parchment paper.
  2. In a mixing bowl, cream together the granulated sugar, brown sugar, and room-temperature butter until light and fluffy.
  3. Add the egg yolk, lemon juice, lemon zest, and vanilla extract; mix until fully combined.
  4. In another bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually incorporate this dry mixture into the wet ingredients until just combined.
  5. Gently fold in the chopped frozen raspberries.
  6. Scoop rounded tablespoons of dough onto the prepared baking sheet about two inches apart and sprinkle with flaked salt.
  7. Bake for approximately 12–15 minutes until edges are lightly golden but centers remain soft.
  8. Allow cookies to cool before transferring them to a wire rack.
