  • 3/4 cup granulated sugar
  • 1 large egg, at room temperature
  • 1 cup ricotta cheese, at room temperature
  • 1 teaspoon vanilla extract
  • Zest of 2 lemons
  • 2 teaspoons lemon juice
  • 1 1/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups powdered sugar
  • 12 tablespoons of lemon juice
  • Extra lemon zest for garnish

Instructions

  1. In a large bowl, beat room temperature butter and sugar until light and fluffy.
  2. Mix in the egg, ricotta cheese, vanilla, lemon zest, and lemon juice until well combined.
  3. Add the dry ingredients: flour, baking powder, baking soda, and salt. Mix until just incorporated.
  4. Chill the dough for at least 2 hours or overnight.
  5. Preheat the oven to 350°F (175°C) and line a cookie sheet with a silicone mat.
  6. Scoop dough onto the prepared sheet and bake for 12-13 minutes until lightly golden.
  7. Cool cookies before glazing with a mixture of powdered sugar and lemon juice.
