  • 1 teaspoon sea salt
  • 1 medium egg
  • 1/2 cup water
  • 2 tablespoons extra virgin olive oil
  • 8 ounces lean ground beef or lamb
  • 1 onion
  • sea salt to taste
  • freshly ground black pepper
  • 16 ounces plain whole milk yogurt
  • 2 to 3 garlic cloves
  • 1/4 cup extra virgin olive oil
  • 1 tablespoon Turkish red pepper paste
  • 1 teaspoon Aleppo pepper
  • 2 teaspoons dried mint
  • 1 teaspoon sumac

Instructions

  1. In a mixing bowl, combine flour and sea salt. Gradually add beaten egg and water until a dough forms; knead until smooth. Cover and rest for 30 minutes.
  2. Mix ground beef or lamb with grated onion, sea salt, and black pepper in a separate bowl.
  3. Roll out rested dough thinly; cut into squares about 3 inches wide.
  4. Place filling in the center of each square, fold corners to seal tightly.
  5. Boil salted water; cook manti until they float (about 5-7 minutes). Remove with a slotted spoon.
  6. Mix yogurt with minced garlic and salt for the sauce.
  7. Heat olive oil with red pepper paste and spices until fragrant; drizzle over manti before serving.
