  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh basil, chopped
  • 1/3 cup olive oil
  • 1/4 cup red apple vinegar
  • 1 tsp Dijon mustard
  • 1 clove minced garlic
  • Salt and pepper to taste

Instructions

  1. Boil the pasta in salted water until al dente (about 8-10 minutes). Drain and rinse under cold water.
  2. In a mixing bowl, combine the cooked pasta with cherry tomatoes, cucumber, red onion, bell pepper, feta cheese, Kalamata olives, parsley, and basil.
  3. In a small bowl, whisk together olive oil, red apple vinegar, Dijon mustard, minced garlic, salt, and pepper until well blended.
