  • 1.25 cups vegetable broth
  • 1 medium zucchini, diced
  • 1 medium bell pepper, diced
  • 1 medium red onion, chopped
  • 1 cup cherry tomatoes, halved
  • 0.5 cup Kalamata olives, pitted and sliced
  • 2 tablespoons olive oil
  • Fresh parsley, chopped (for garnish)
  • Optional: crumbled feta cheese

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine zucchini, bell pepper, red onion, and cherry tomatoes. Drizzle with olive oil and sprinkle with oregano, garlic powder, paprika, salt, and pepper. Toss to coat.
  3. Spread the vegetables on a baking sheet lined with parchment paper and roast for 20-25 minutes until tender.
  4. While the vegetables roast, bring vegetable broth to a boil in a medium saucepan. Stir in the couscous, cover, and let sit for 5 minutes before fluffing with a fork.
