  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons lemon juice
  • Salt and pepper, to taste

Instructions

  1. Rinse the shrimp under cold water and pat dry with paper towels.
  2. Heat olive oil in a large skillet over medium heat.
  3. Sauté minced garlic for about 1 minute until fragrant.
  4. Add the shrimp to the skillet; season with salt, pepper, oregano, paprika, and red pepper flakes (if using). Cook for 2-3 minutes on each side until pink and opaque.
  5. Stir in halved cherry tomatoes and cook for an additional 2 minutes until softened.
  6. Remove from heat; gently fold in crumbled feta cheese.
  7. Add chopped parsley and lemon juice; mix lightly before serving.
