  • 1 pound lean ground beef
  • 1 can (15 ounces) black beans (drained and rinsed)
  • 1 medium onion (chopped)
  • 1 cup frozen corn (thawed)
  • 2 cans (15 ounces each) chopped tomatoes (drained)
  • 8 green chile peppers (roasted and chopped)
  • 12 yellow corn tortillas
  • 1 cup Pepper Jack cheese
  • 1 cup sour cream
  • Taco seasoning

Instructions

  1. In a large fry pan over medium heat, brown the ground beef until no longer pink. Add the chopped onions and cook until translucent.
  2. Stir in thawed corn, black beans, drained tomatoes, green chiles, taco seasoning, and water. Simmer for about 10 minutes.
  3. Preheat your oven to 350°F (175°C) and spray a 9 x 13 baking dish with cooking spray.
  4. Layer one cup of the beef mixture at the bottom of the baking dish, followed by half of the corn tortillas. Repeat layering with remaining beef mixture, sour cream, another layer of tortillas, and top with cheese.
  5. Bake for about 25 minutes until bubbly and golden. Allow to sit for five minutes before serving.
